Pie Series

Inspiration comes sometimes unexpectedly and in unexpected places. I came across the “Betty’s Pies” cookbook when I toured the William A. Irvin. We plan to do something similar with this homegrown Minnesota icon, by featuring a recipe out of the book once a month.

Strawberry Pie

Betty obtained her recipe out of a newspaper in the mid-1950s and then tested it on some of her Reserve Mining customers who gave their approval.  Betty’s Café then became a natural stopping point for commuters as it was directly on en route for a lot of the workers who would drop in for coffee and pie.

Our pie of the month is an Apple-Cranberry pie to get you in the mood for the Thanksgiving holiday in month of November.  Apples and cranberries area terrific combination in a pie.

North Shore Icon Betty's Pies

If you drive up Lake Superior's North Shore on highway 61, you will eventually reach Betty's Pies near the mouth of the Stewart River.  Although Betty sold the business in 1984, Betty's legacy lives on.  The cafe has a rich history. Around 1956, Betty Lessard took over the family fish stand and slowly converted it into a cafe. Homemade pies were the star attraction.
